How a moka pot actually works

Steam pressure, the funnel, and why the result never quite matches an espresso machine.

A moka pot is a small pressure vessel. That is the whole trick. Water in the base is heated, some of it turns to steam, and the steam pushes the remaining liquid water up through a funnel of ground coffee and into the top chamber.

The three parts

  • The base holds water. Fill it to just below the safety valve — the valve is there to vent if the pot is blocked, not as a fill line.
  • The funnel basket holds the coffee. Fill it level and do not tamp; a packed basket raises resistance and makes the pot run hotter.
  • The top chamber collects the brew. The column in the middle is where the coffee arrives.

What the pressure is doing

As the base heats, air and steam above the water expand. Once that pressure exceeds the weight of the water column plus the resistance of the coffee bed — roughly 1 to 1.5 bar — water is forced upward. Espresso machines work at around 9 bar, which is why moka coffee is strong but does not produce true crema.

Getting a cleaner cup

  • Start with hot water in the base so the coffee spends less time on a hot metal funnel.
  • Use a medium-fine grind — finer than drip, coarser than espresso.
  • Take the pot off the heat as soon as the stream turns pale and starts to sputter.
  • Run the base under cold water to stop extraction immediately.

Why it never matches a machine

Lower pressure means fewer emulsified oils and less dissolved CO₂, so no stable crema. Higher water temperature near the end means more bitter compounds. The result is its own thing: concentrated, a little rough, and excellent diluted with hot water or milk.
